Sweet Potato Fries with a Curry Mayo (GF)

Hey everyone!

Today I’ll share with you how to make delicious sweet potato fries and a curry mayonnaise. I had the curry sauce once at a burger restaurant and I LOOOOOVED it. So last summer when I was in Peru, we made homemade burgers (recipe will be up soon hopefully) and I decided to mix mayonnaise and curry powder. It turned out great and my friends finished it so fast that they asked me to make some more. It’s so easy, yet so good and original 🙂

Also, I really like that it is made of sweet potatoes because they are so cheap and you can keep them for awhile. So it’s perfect to make at the end of the week when you are out of fresh vegetables.


Ingredients:IMG_8346

  • 1 sweet potato/person
  • Curry powder
  • Chili pepper
  • Italian Seasoning or Herbes de Provence
  • Crushed Red Pepper
  • Olive Oil
  • Salt
  • Black pepper

For the curry mayonnaise:

  • Curry powder
  • Mayonnaise

Instructions:

First, preheat your oven at 425 degrees Fahrenheit (230 Celsius).

Peel your sweet potatoes and rince them once you’re done.

Start cutting them into strips or wedges according to how you like your fries. I like to cut them bigger than I would normally do because they shrink when you cook them.

Then spread the fries on a baking sheet covered by aluminium, to make it easier for you to clean later. Cover your fries with olive oil and all of the other seasonings (curry powder, chili pepper, herbs de Provence/Italian seasoning, crushed red pepper, salt and black pepper) according to your tastes. I like to have a lot on mine!!!

Place in the oven for about 20-30min or until they look cooked to you. Don’t forget to turn them over halfway through!

For the curry mayonnaise, just mix some mayonnaise and quite a lot of curry powder together. Taste and add curry powder according to how you like it. The more the better for me :p

I love having these with homemade burgers (recipe coming I promise!) or with some paprika chicken and salad.

If you want to make your fries a little bit crispier, you can also precook them for a little bit before adding them to the oven. You can do so by putting your cut sweet potatoes in the microwave for 2-3min with some water or you can also steam them.
