Today is Sunday, and Sundays mean I make quite a bigger meal so I can have some leftovers for the rest of the week. So I’ll share with you one of my favourites: meatballs! This recipe makes quite a lot of them so I also freeze a few. That way I can have a delicious homemade meal when exams come and I don’t have time to cook.
I love having these meatballs with pasta, quinoa or rice.
Ingredients:
For the meatballs: (makes about 30 meatballs)
- 1 pack of ground beef (mine was 500g)
- 1 pack of ground turkey (mine was 400g)
- Half an onion
- 1-2 garlic clove(s)
- About 1 tablespoon of flour
- 1 egg yolk
- 1 teaspoon of crushed red pepper
- 1 teaspoon of curry
- 1 teaspoon of chili powder
- 1 1/2 teaspoons of italian seasoning
- 1 teaspoon coriander
- Salt
- Black pepper
For the sauce:
The sauce is just for half of the meatballs. So if you want the sauce for all meatballs, double the recipe.
- Half an onion
- 1-2 garlic clove(s)
- 1 can of diced tomatoes (mine was 780g)
- Half a can of tomato paste (80g)
- 1/2 a cup of fresh cherry tomatoes
- 1 teaspoon of cumin seeds
- 1/2 teaspoon of crushed red pepper
- 1/2 teaspoon of curry
- 1/2 teaspoon of chili powder
- 1 teaspoon of italian seasoning
- 1/2 teaspoon of ground coriander
- Salt
- Black pepper
Instructions:
Preheat your oven to 400 degrees Fahrenheit (200 Celsius).
Cut half of the onion in very small cubes and finely chop the garlic clove(s) as well. In a big bowl, mix all the ingredients for the meatballs. Once it is all mixed together very well, use your hands to make balls and spread them on your baking sheet.
Put in the oven for 20min. Make sure you turn your meatballs halfway through.
While the meatballs cook, add some oil to a large saucepan and cook at low-medium heat. Cut the other half of the onion in strips and finely chop the garlic clove(s). Add to the saucepan with the cumin seeds and the crashed rep pepper. Mix well until it turns to a light brown. Boil just a little bit of water in your kettle. Add a tablespoon of the boiled water to the tomato paste and mix. Add it to the saucepan and mix again. Then, add of the other spices: curry, chili powder, italian seasoning, coriander, salt, and black pepper. Add the can of diced tomatoes, mix again and cover. In a few minutes, your meatballs should be ready. Once they are, add a few to the sauce with the cherry tomatoes cut in half and leave to cook for 1-2min.
Serve with your choice of pasta, rice and quinoa.
