Hey everyone!
Today I’ll share with you my recipe for eggplant pizzas. Instead of using a normal pizza crust, you’ll use your eggplant. It’s honestly delicious and perfect for a side dish for your dinner or to bring to a potluck. It’s also super easy and you can add your favourite toppings! I don’t like cheese but feel free to add that to your pizza š
Ingredients: Ā Ā 
- An eggplant (depends how big is your eggplant but mine made about 8 pizzas)
- Tomato sauce
- Spinach
- Cherry tomatoes
- Italian Seasoning
- Salt
- Black Pepper
- More topping ideas: cheese, mushrooms, bell peppers, tuna, bacon, ham/turkey slices, crushed red pepper, etc.
Instructions:
Preheat your oven at 400 degrees Fahrenheit (200 Celsius).
Wash your eggplant and slice it into 1/2 inch rounds (a bit more than 1cm). Arrange the eggplant rounds on your baking sheet and sprinkle with salt. Bake for about 15min, turning the eggplants halfway through.
Take out of the oven and spread about one spoon of tomato sauce on each round. Sprinkle with the italian seasoning and black pepper. Add the spinach and cherry tomatoes cut in half.
If your oven has a broiler, turn it on. If you don’t, leave your oven at 400 degrees. Cook your pizzas for another 3-5min.
