Hey everyone,
The weather is starting to become a lot more wintery over here: it’s dark very early, quite windy and getting chilly too. So what better way to fight the cold than with some baby roasted potatoes?
I really like making these when I am out of fresh vegetables. You can keep potatoes for a few weeks and they’ll still be great! So perfect for when you are overloaded with school work (I know I am!) and don’t have time to go grocery shopping. They are also super easy to make, cheap, and a great option to bring to a potluck.
I found a bag of these different coloured potatoes at my local produce place, which I really liked. The darker potatoes are so pretty from the inside: they are literally purple!
Ingredients:
(3 servings)
- Baby potatoes
- Rosemary – try to get fresh ones if possible
- 2 garlic cloves
- Italian Seasoning
- Crushed Red Pepper
- Salt
- Black Pepper
- Olive Oil
Instructions:
Preheat your oven at 400 degrees Fahrenheit (200 Celsius).
Wash your potatoes very thoroughly since we won’t peel them. Cut them in half and spread over your baking sheet.
Cut your garlic cloves very finely and add to the potatoes. Drizzle with olive oil, rosemary, italian seasoning, crushed red pepper, salt and black pepper.
Put in the oven for about 40min. Keep checking on them and add more olive oil if your potatoes look a bit dry.
