I was sick in bed the other day, it was getting late and I still hadn’t had lunch. I didn’t have much in the fridge, I wanted something comforting and easy to make. So I made my Spinach and Cherry Tomatoes Pasta!
I’ll share with you the recipe. Honestly, so simple to make and so good 🙂
- 1/4 of an onion
- 1 garlic clove
- 1/3 of a cup of tomato paste
- A handful of spinach leaves
- A handful of cherry tomatoes (or diced fresh tomatoes)
- 1 teaspoon of chili powder
- 1 teaspoon of italian seasoning
- 1/2 teaspoon of crushed red pepper
- Salt and black pepper
- Olive oil
- Options: basil, chicken.
Double the recipe if you want to save some for another day!
Boil the water for your pasta. While the water boils and you cook your pasta, make the sauce so it’s ready at the same time!
Add some olive oil to your pan. Cut the onion and chop finely your garlic clove. Add it to the the pan. Cook at low-medium heat for a few minutes. Boil a little bit of water in your kettle. Once this is done, mix the boiled water (about 2/3 teaspoons) with the tomato paste and add the mixture to the onion and garlic. Add the chili powder, italian seasoning, crushed red pepper, salt and pepper. Let it cook for a few minutes and cut your cherry tomatoes in half. Every 2min, add some of the cherry tomatoes and spinach leaves. Right when the pasta and the sauce are ready, add the last cherry tomatoes and spinach leaves. Mix the sauce with your pasta and add basil if you have some!
