Hope you are all going great and getting festive! Can’t wait for the holidays!!! 🙂 I have less than 2 weeks of exams left and then I am freeee!
Today I’ll share with you a recipe I love to make during exams to bring to the library. It’s super easy and quick to make. You can bring it to work, school or even to a potluck! I think it’s perfect for a side dish. I also really like that you don’t need to use a microwave for this: no need to look for a microwave and line up to heat your lunch during peak hours! (as I do)
I honestly cannot just have a normal salad for lunch or I’ll be starving a few hours later and I’ll end up eating chocolate all afternoon. Even if I add eggs, chicken or beans… It just doesn’t work for me. But this salad has tuna AND lentils so it really fills me up and lasts me until dinner 🙂
So to summarize: healthy, quick, easy, delicious and filling!? You need to make this!!!!
You can really add anything you like but here is a go-to for when I don’t have much left in my fridge.
Ingredients: 
- 1/2 cup of lentils (don’t forget to soak them for a few hours!)
- Tomatoes/cherry tomatoes
- Cucumber
- A handful of spinach leaves or lettuce, cut in small pieces
- 1 can of tuna: my favourite is lemon and black pepper
- Your favourite dressing
- Options: avocado, corn, feta cheese… anything you have in your fridge really
Instructions:
Cook your lentils according to the instructions.
While they cook, get all of your vegetables ready: wash them and cut them!
Once your lentils are ready, make sure you let it cool for a bit. Then add all of your cut vegetables, your tuna and the dressing. Mix, and …
