French Savoury Crepes (Galettes) (GF)

I realized I haven’t shared many French recipes with you yet, and that needs to be changed … quickly! As some of you know, I am French and I grew up in Paris for most of my life until I moved to Canada for university. I want this blog to have a few French recipes since that is what I ate growing up, and I cook French food most of the time! So be ready for more French recipes on the blog! 🙂

Last Christmas, my uncle and aunt got me an amazing crepe machine since they live in the part of France where French crepes are their specialty. The other day, after a long day of classes on a rainy and cold day, I decided I wanted to have some home food and do something fun with my roommate and my boyfriend. I went and bought the last few ingredients I needed and made crepes at night!

I am fortunate enough to have this amazing crepe machine that is so fun to use, but you don’t actually need one to make these crepes. However, if you had a crepe or pancake pan it would be much better. I bought mine at Ikea for just $10, and I know you can find them everywhere. 

This recipe is super easy and quick to make, and everyone can choose their own toppings: perfect for a family or friends night! 


For the batter: IMG_9572

  • 250g of buckwheat flour
  • 1 tablespoon of white flour (use buckwheat if you can’t eat gluten)
  • 1 egg
  • 48 cl of milk
  • 12 cl of water
  • 1 teaspoon of salt
  • Black pepper

For the crepe toppings: IMG_9580

  • Ham or turkey slices
  • Grated cheese (we use Gruyere in France)
  • 1 egg/crepe
  • Salt
  • Black pepper
  • Options: mushrooms, andouille (French sausage), salmon, small bacon strips, onion, spinach, etc.


In a big bowl, put your buckwheat flour, white/buckwheat flour, salt, egg and water. Mix until you get a compact ball. 

Add 12cl of milk (NOT ALL OF IT!) and mix for about 5min, or until you get a perfect homogenous paste.

Progressively add the rest of the milk… then your batter is ready!


If you have one, use a pancake pan and add a bit of butter to it on a medium heat. Wait a few minutes until the pan is hot. Using a ladle, pour some of the crepe batter (about 1 full ladle). Wait 1-2 min, and turn over your crepe. 


Then add you favourite toppings! Here is my recommendation:
As soon as you turn over the crepe, break an egg on the crepe. Add some grated cheese. Cut your ham (or turkey) slices in a few pieces and place them all over the crepe. Add some more grated cheese, salt and black pepper. 
Once the egg is cooked, your crepe is ready 🙂
In between 2 crepes, add some butter before adding the crepe batter.

If you want to be French for the night, eat your galette with some apple cider!
