To thank you all for your support and with Valentine’s Day approaching, I thought I would share with you three recipes this week with a Valentine’s day theme that I think would be perfect for this special day. I made sure the recipes are ones that you can do with your family or friends, and not necessarily for just for a romantic night.
For the first recipe of the week, I wanted something for a breakfast (in bed?) for your girlfriend, boyfriend or for your parents. I have been craving pancakes with a raspberry (my favourite fruit) sauce for so long and I think the pinky red of the sauce is perfect for Valentine’s Day. And who doesn’t want to start the day with pancakes? I know I do (wink wink to my roommate and/or my boyfriend)!

(makes about 6 large pancakes)
- 1 cup of flour
- 2 tablespoons of sugar
- 2 teaspoons of baking powder
- 1/2 a teaspoon of baking soda
- A pinch of salt
- 1 cup of milk
- 1 egg
- 2 tablespoons of butter
- 1 1/2 cup of frozen or fresh raspberries
Mix together the flour, baking powder, baking soda, sugar and salt in a bowl.
In a second bowl, beat the egg and milk together. Then add the melted butter and stir.
Pour the milk mixture into the dry ingredients and mix well.
In a medium saucepan, put 1 cup of frozen raspberries (save the other 1/2 cup of later). Cover and let it simmer at a low-medium heat.
Heat a nonstick pan over medium heat and place a little bit of butter. Wait for it to melt and for the pan to get hot. Place one full ladle of the pancake mix onto the pan. Wait for it to be dotted with holes and flip.
Once your raspberries are cooked, remove from heat and add the other 1/2 cup of raspberries. Mix and serve the sauce on top of your pancakes!
