Nachos! (GF)


Hey everyone!

Recipe number 2 of 3 for the Valentine’s Day inspired week! For this blog post, I wanted something kind of chill as I know lots of people have a relaxing evening on this day, watching TV or playing games with friends, family or boyfriend/girlfriend. So I thought nachos were the perfect fit! It’s also super fun to make with other people, as anyone can add what they’d like on their nachos. 

I actually made nachos twice this month: once for some of my friends and I, and once to bring to a university club potluck. My nachos were gone in just seconds in both cases. Why? because they’re delicious, DUH 😉 No, seriously I also think they’re great because they are gluten free, can be vegetarian (if you don’t add meat),  vegan and dairy free (no sour cream). Yes, they work for most people (which is rare nowadays)! 

So invite some people over on Valentine’s Day, make those nachos with them and catch up, play games or watch a movie 🙂

Ingredients: IMG_9470

  • 1 bag of corn tortilla chips
  • 1 can of refried beans
  • Salsa
  • Cheddar cheese
  • Jalapeños
  • Black olives
  • 1 or 2 tomato(es)
  • 1 or 2 bell pepper(s)
  • 1 avocado
  • 3 tablespoons of chili powder
  • Sour cream
  • Black pepper
  • Options: sweet corn, green onions, white onion, red beans, chicken, bacon, ground beef, cilantro.


Preheat your oven at 400 degrees Fahrenheit (200 Celsius). 

In a saucepan, heat your refried beans. 
While this is cooking, wash your tomato(es) and bell pepper(s) and cut them in pieces. 

Line a baking pan with parchment paper. Spread your tortillas on it and add the cooked refried beans evenly. Use your hands to mix the tortillas around if necessary. Add the tomato(es), bell pepper(s), chili powder, jalapeños, black olives, black pepper and cheddar cheese. Add a little bit of salsa as well, but not too much or it will get soggy.Try to mix the tortillas and the toppings around, and add another layer of cheese on top. 
Cook in the oven for 10min. While this is cooking, cut your avocado in pieces.


When the nachos are ready, take them out of the oven and add the avocado, some more salsa and sour cream.
