I am doing something a little bit different this week and actually having a guest on my blog! So this recipe is from one of my best friends and roommate 🙂 I see her making this salad almost every day and I thought it would be awesome if she could share it with you! I don’t usually have salads for lunch because it doesn’t fill me up, but I’ve made this one and the seeds and salmon really satisfy my hunger.
So we made this together the other day and here it is!

- 2 handfuls of arugula
- 1 mushroom
- 1 tomato
- Half a bell pepper (you can also use different coloured peppers)
- 1 green onion
- 1 handful of cilantro
- 1 can of salmon
- 1 tablespoon of sunflower seeds
- 1 tablespoon of flax seeds
- 1 tablespoon of dried cranberries
- Your favourite salad dressing
Wash and cut all of your vegetables. Open the canned salmon and drain all of the water.
Mix all your vegetables, seeds and salmon together in a bowl and add your salad dressing!
Emily’s tip: in order to prevent your vegetables from being soggy (if you make this in the morning for lunch), first add the seeds and cranberries and place the arugula on top.
