Hey everyone!
For this week, I thought it would be nice to share with you one of my favourite French snacks. I love baking these because everyone loves them, they’re so easy to make and the whole house smells A-MA-ZING when you bake these!
I remember making madeleines a lot when I was young and it’s something that most French people have as an afternoon snack or with tea.
Unfortunately, I haven’t tried to make these without gluten, but I should! I’ll let you know if I succeed and will post a recipe up 🙂
The best would be to have a madeleine pan as it’ll ensure that it is crispy on the outside and soft in the inside. However, if you don’t have one and don’t plan to get one, try making these in a mini-muffins pan.
Ingredients: 
- 2 eggs
- 2/3 cup of flour (80g)
- 1/3 cup + 2 tablespoons of sugar (80g)
- 1/3 cup of butter (70g)
- 1 teaspoon of baking powder
- 3 tablespoons of lemon juice
- Zest of half a lemon
Instructions:
Preheat your oven at 520° Fahrenheit (270° Celsius).
Melt your butter and let it cool for a bit.
In a bowl, mix the flour, baking powder and sugar. Break your eggs and separate the egg yolks and whites. Add the yolks to the flour-sugar and mix with a wooden spoon.
With a fork, beat the egg whites in another bowl for a few minutes until they look like this:
Add them to the rest of the mix as well as the melted butter. Mix again.
Add the lemon juice and the zest, and mix once more.
Pour one tablespoon of the mix in each mold.
Bake in the oven at 520° F (270° C) for 4min. Then lower the oven temperature to 410° F (210° C) and bake for another 4min.
