My Mum’s Chocolate Cake (GF)

This is a go-to cake that my mum makes when she has no time to bake anything else and it’s always a hit! EVERYONE loves it! Need to make dessert for a potluck or for your friend’s birthday and don’t have time to go buy ingredients or you’re not a great baker? Don’t worry! This cake is super easy and quick to make! However, it is a lot more delicious the next day so try to leave it overnight… that’s if you can resist eating it! It’s also super practical since all the ingredients are usually things you already have in your fridge or kitchen cupboards.

  • 200g of chocolate
  • 175g of salted butter
  • 3 eggs
  • 3 tablespoons of almond meal
  • 1 tablespoon of flour or mazeina
  • 100g of sugar
  • Options: pieces of candid orange or pieces of hazelnuts.


Preheat your oven at 355° Fahrenheit (180° Celsius).

Break your chocolate and butter in small pieces. Make a water bath: put your chocolate and butter in a saucepan and put it in a slightly bigger saucepan with a little bit of water in it. Make sure you stir regularly and take off the heat when it is all melted.

Once the chocolate and butter are completely melted, remove from the heat and wait a few minutes to let it cool. Add progressively the eggs while mixing at the same time so the eggs don’t cook. Then add the almond meal, sugar and flour/mazeina. Mix together very thoroughly.

In your baking tin, spread a little bit of butter and flour to make sure your cake does not stick to the tin. Then add your cake batter to the baking tin.

Bake it for about 12-15min. Don’t worry if it looks a bit liquidy/flowy! It will get harder after you take it out of the oven. It’s delicious on its own or with a scoop of vanilla ice cream 🙂
