I’M BACK!!!! And with a delicious recipe 🙂
My dad’s birthday was last month, and since it was a beautiful sunny day and my dad had just bought fresh strawberries from the farmer’s market, I decided to make a strawberry and lemon pie!
I think it’s the perfect dessert for this time of the year. And although I do love a chocolate cake, I would rather have something with fresh fruits during the summer.
Anyway, give this one a try and let me know in the comments what you think of it 🙂 I’m sure it would be just as good with raspberries or a mix of different berries.
For the dough:
- 125g of butter
- 100g of icing sugar
- A pinch of salt
- 1 egg
- 250g of flour
For the lemon cream:
- 2 lemons
- 4 egg yolks
- 100g of sugar
- 50g of butter
Let’s start with the lemon cream:
Squeeze your two lemons.
Break the eggs and separate the whites from the yolks. Add the sugar to the egg yolks and mix until the mixture whitens a little bit.
Add the lemon juice and heat the mixture at very low heat until it thickens. Make sure it does NOT boil! Once it is done, remove from the heat and let it cool. Cut the butter in small cubes and add it to the mixture. Place it in the fridge.
Now let’s do the dough:
Work the butter until it gets soft like an ointment. Add the icing sugar and the salt, then add the egg. Mix and sift the flour. Mix a little bit more (you might want to use your hands here) but not for too long. Leave in the fridge for one hour.
After one hour, knead the dough with your palm. Separate the dough in four different pieces and place them on top of each other. Repeat three times and leave in the fridge for another 30min.
Then, preheat the oven at 340° Fahrenheit (170° Celsius).
Place a baking sheet or spread butter and flour on your pie baking tray so the pie doesn’t stick to the tray.
Roll out the dough and place it on your pie baking tray. Use a fork to make some holes in the bottom of the pie dough.
Bake it for 20-25min in the oven.
Add the lemon cream to the baked pie and place the strawberries on top.
