Hey everyone!
This week’s recipe is a summery one and that just makes me very excited. I made these pesto and cherry tomatoes skewers for my birthday barbecue and my friends and family all loved it so much I decided to make it again for a girls dinner this week. And so I am sharing the recipe with you all so you can plan your own barbecue or dinner and make these for your guests 🙂
I like this recipe because you can also change it up a bit. You can add onions or bell peppers to the skewers for example and… you can even decide to make your own pesto sauce instead of buying it from the store! I made my own pesto sauce and I will post the recipe of it in the next few weeks!
Ingredients: 
- 1 chicken breast per person
- Cherry tomatoes
- 1 cup of pesto sauce (or according to your taste)
- Options: onion, bell pepper, lemon, pine nuts, coriander
Instructions:
Soak your wooden barbecue skewers for about 10-15min. Cut your chicken breasts in cubes and place them in a bowl with your pesto sauce. Let it marinate for 30min to an hour in the fridge.
Wash your cherry tomatoes and preheat the grill to medium heat.
Then thread the chicken and the cherry tomatoes onto the skewers (leave a small space between each item). I usually have 2 to 3 cherry tomatoes per skewer.
Grill the skewers for about 8-10min or until the chicken is no longer pink in the center.
Place on your plate and squeeze a little bit of lemon juice and sprinkle some fresh coriander or pine nuts if you would like.
