It’s time for another super easy (yet delicious) breakfast recipe! Perfect Sunday meal prep for the week: all you do is throw all the ingredients together, mix, and bake in the oven.
It’s one of my favourites because you can switch it up every week by changing the ingredients. I’ve added a list of different things you can add so you don’t feel like you’re eating the same breakfast over and over again. Great combinations could be chocolate chips and freeze dried raspberries; coconut chips and dried cranberries; dried apricot and pistachio, etc. I usually always add goji berries to mine because they’re so good for you and I find they add great taste and texture to the granola.
Making your granola at home is so much better. Not only you can switch it up, but you also know what’s inside: packaged granola are often full of sugars and fats you can easily avoid if you make it yourself. Not being able to eat gluten also makes the selection of granola you can buy very limited, and they’re usually very expensive and not great!
What used to be my own granola turned out to be my family’s favourite breakfast so make sure you double up on the recipe if you don’t live alone 😉
You can have the granola with milk, yoghurt, or even on top of your oatmeal to add some crunch!
- 1/2 cup of pure maple syrup
- 1/4 cup of coconut oil
- 2 cups of rolled oats
- 1 cup of almonds
- 1 cup of walnuts
- 1/2 cup of pecan seeds
- 1/4 of raw sunflower seeds
- Optional: coconut chips, raisins, dried apricots, dried cranberries, pecan, goji berries, chocolate chips, freeze dried fruits, pistachio, etc.
Preheat the oven at 340° Fahrenheit (170° Celsius).
In a bowl, mix together the coconut oil and maple syrup. Add the oats, almonds, walnuts, sunflower seeds and pumpkin seeds. Mix well.
Spread it evenly on a baking tray with parchment paper.
Bake for 20-30min or until golden.
Let it cool, and add the options you selected (dried fruits or others). Transfer to an airtight container and enjoy!
